I've finally decided to get on board with "Menu Plan Monday" over at orgjunkie.com, as well as Freezer Cooking. It's taken me a long time to learn how to cook, but I'm finally doing a lot better now than I was a year ago.
Today, I made a ton of mini pancakes and waffles for the kids. I froze them to make it easier for when school starts in a few weeks. I also made some meatballs for spaghetti nights. And, as you can see, my freezer is full with chicken breasts on the left side. I bought a 40 lb. box from my MIL's store at $1.69/lb. (cheapest I can find), trimmed and put them 4 to a bag, as well as marinated most of them. I made sure to put what I marinated it with and today's date on them (I read it somewhere, definitely a good idea!)
Since this is my first MPM, I'm not sure I'll follow this to the "T," but I will try to follow as much as possible.
Monday - Take-out (I was too tired after trimming, packaging and marinating 100 chicken breasts)
Tuesday - Teriyaki Chicken and Rice
Wednesday - Going to MIL's for dinner
Thursday - Taco Hamburger Noodles (it's similar to Hamburger Helper, just home-made)
Friday - Spaghetti and Meatballs
Saturday - Italian Chicken with noodles
Sunday - Tacos

Where does your MIL work? I would love to go there and buy that box of chicken for that price!

She actually works at a local supermarket called Camillo's. It's got the best prices on meat around here. And with how fast we go through chicken, we need to stock up like crazy when it's a good price.
So are you doing a Once A Month Cooking type of thing? I did that twice. lol Would love to do it again. Is that boneless/skinless chicken?
I don't really want to do the Once a Month Cooking thing (I don't have the patience for that), but it does help that the chicken is already marinated and ready to go. It is boneless/skinless chicken, my favorite! LOL
